I don’t care what anyone says – I love the trend of opening up eateries similar to the style of Chipotle. It’s quick, convenient, and if done right, can be a great thing when you want a quick but not boring desk lunch. Now, with that being said, Latin Beet Kitchen isn’t my new go-to for lunch everyday. I can’t spend that much on lunch every day, I need variety, and I also don’t always feel like being healthy and bright. BUT – it certainly was delicious. This place has a fun, lively, and creative concept. The food was delicious with quality ingredients, interesting combinations, and endless options for you to keep going back to try new things. It honestly really made me want to eat more healthfully because it was that satisfying.
So I dare you – be better than Chipotle. I know the temptation is hard, but I believe you can do it and come here instead.
Costa Ceviche – probably my favorite bowl. Similar to the style of the trending Poké Bowls, this Salmon Ceviche was refreshing, citrusy, and delicious.
Ingredients: Brown Rice + Latin Beet Carrot Slaw, Seasonal Pickled Vegetable, Crispy Quinoa, Cilantro, Avocado, Salsa Criolla* and Salmon Ceviche with Creamy Avocado and Aji Verde
The Latin Beet – The heartiest and most filling of the bowls; I thought this was savory, hearty, but it did lack some of the flavor that I had in the other bowls.
Ingredients: Qunioa with Sweet Potatoes, Seasonal Vegetable, Purple Cabbage Slaw, Crispy, Quinoa, Salsa Criolla* and anticucho steak* + Spicy Latin Beet
Amazonas (w/ 60 minute egg) – I thought this bowl was the perfect balance of being hearty and filling without sacrificing flavor. And get that 60 minute egg with it, just trust me.
Ingredients: Broccoli, Sweet Potato, Cherry Tomatoes, Crispy Corn Cancha, Salsa Criolla* and organic Chicken + Aji Verde
Empanadas – I don’t understand why, but I LOVED these empanadas. They were so addictive. The creamy and stretchy cheese, the sweet corn, the bite from the cilantro and jalapeño, it was just the perfect combination of flavors in one little package.
And that’s it. I’ve only had lunch so I’ll have to go back again.
